Today was the hottest day of the year so far! O.M.G, Spring is finally here! The skies were blue, the sun was beaming down on us, oh how I missed it! To cool down on this gorgeous day I made this Virgin Elderflower Mojito. I love the strong yet unusual muted taste of elderflower cordial so I figured, why not mix it in my mojito? I generally love, love, love mojitos. There’s just something about the blending of mint and lime that just does it for me! Besides, mojitos take me back to the days I was in law school and living the carefree student life! The strong but refreshing flavours of a mojito blend so well with the sparkling Elderflower that honestly, there is no better way to herald the spring in!
If you’re hosting any time soon in this spring – summer season, this is a great recipe for a small crowd. Not only is it easy to make but its rather flavoursome and quite refreshing especially after indulging in savoury barbecued meat. Don’t forget to serve it with some ice cubes!

- 1 Litre Elderflower Presse
- 1 Fresh Lime sliced into 4 or 8
- 10 sprigs Fresh Mint
- 1 teaspoon Sugar
Add all ingredients into a glass jar and stir.
Leave to cool for at least 30 mins and enjoy!
