Potato & Beef Croquettes

As much as I love cooking, sometimes I would rather be out of the kitchen and watching a good movie with my husband. This doesn’t mean my tummy starves though! I made these Potato & Beef Croquettes for dinner today as they are so filling and so easy to make! After eating a few I was done for the evening!

I served these with a portion of salad and a wedge of lime! You can have these as an appetiser or a main! Take your pick.

Ingredients

  • 1 tablespoon olive oil
  • 250 grams Minced Beef
  • 3 cloves garlic minced
  • 1 tablespoon Chilli sliced or minced
  • 1 teaspoon Paprika
  • 5 Potatoes peeled
  • 2 cups Breadcrumbs
  • 3 Eggs lightly whisked

Instructions

In a pot, placed peeled potatoes and boil until soft (approximately 20 minutes)

While potatoes are boiling, pour the olive oil in a separate pan and let it warm up slightly for a minute or so. Add minced beef, garlic, chilli and paprika. Fry on low-medium heat until the minced beef has been cooked through.

Mash the potatoes and add the cooked minced beef and combine well.

Place breadcrumbs into a small bowl and eggs in a separate bowl.

Make the croquette balls (or any other shape of your choice). Cover them in the breadcrumbs, then dip them in the eggs. Place them on your prepared baking tray. Once all the balls are ready, bake at 180 °C for 15 minutes.

Serve with a salad and sweet chilli sauce. Enjoy!
