King Prawn Cous Cous
I tend to spend a lot of time indoors these days due to the chilly weather. Can you believe it’s almost April and it’s STILL snowing? Goodness me! Spring, where are you? Anyway,.. after one such snowy afternoon, I fancied something wholesome but quick to make. I fancied some cous-cous and my husband really wanted some spicy prawns. I put the two ingredients together (and some) and came up with this recipe! This King Prawn Cous Cous recipe makes for a tasty, yet fulfilling meal and it only take 10 minutes to cook! Yes! 10 whole minutes!
Apart from the length of time it takes to make the recipe, one thing I love the most about it is how full of flavour and refreshing it is. It’s also quite versatile in that it makes for a quick lunch or a light dinner. Cous cous in general is quite versatile because its a bit bland in flavour so it really absorbs flavours very well.

Ingredients
- 2 tablespoons olive oil
- 1 Red Pepper chopped
- 1/2 Red Onion chopped
- 1/2 Stick of Celery chopped
- 3 Garlic Cloves minced
- 250 grams King Prawns
- 1/2 Mixed Vegetables optional
- 1 cup Cous-Cous
- 3 cups Vegetable Stock
- 20 grams Parsely to garnish
- 1 tablespoon Chilli minced
Instructions
Add all ingredients (except for Cous-Cous and Vegetable Stock) into a pot and fry for 3-6 minutes until King Prawns are cooked.
Add Cous-Cous and Vegetable Stock into pot and stir well.
Leave to simmer for 5 minutes or until Cous-Cous is soft. Serve and enjoy!
