Caramelised Banana Loaf

All to often, my kitchen is left with too many banana about to go off all because I bought them with the intention of being healthy and well…  forgot about them.  You can’t imagine how many banana loaves I have made as a result of this.  Well, at least no bananas have gone to waste. The benefit of this for me anyway, is that I have time and time again developed the perfect caramelised banana loaf recipe.  I love great food and I can guarantee you that this loaf is a piece of heaven itself!

The taste, the fragrance, the texture, I can taste a slice as I type this up. Yes, its safe to say that this loaf finished an hour after I baked it.  This loaf is a winner!

Serve over breakfast with a cup of tea or coffee or after dinner with some custard or cream.

Ingredients

  • 3 Bananas mashed
  • 1/2 cup Brown Sugar
  • 1 teaspoon Cinnamon
  • 1 & 1/2 cup Self-raising Flour sifted
  • 1/2 cup Honey runny
  • Pinch Salt
  • 3 Eggs lightly whisked
  • 1 tablespoon Vanilla Extract
  • 1/2 cup Light oil or Butter

Instructions

1. Pre-heat oven at 180°C.  Add sugar, honey and oil to a large bowl and whisk lightly to combine.

Gradually add the eggs, flour, cinnamon, salt, bananas and vanilla extract as you whisk.

Once well combined (without lumps), bake at 180°C for 30 – 40 minutes. Check that the loaf is done baking by placing a skewer in the loaf – if it comes out clean, the load is ready. If not, continue to bake until the skewer comes out clean.

Once done, leave to cool then serve.
