  1. In a large mixing bowl, using an electric whisk, whip the butter until light and fluffy. Add sugar and vanilla extract and continue whipping making sure you maintain a creamy and fluffy mix.
  2. Sift into the creamy mixture the flour, cocoa powder, cappuccino mix, baking soda and salt. Mix until well combined. This should result in a really dry cookie dough. (If dough is too sticky add a bit more flour).
  3. Use a cookie scoop (to make even portions) and place cookies on a prepared baking tray. If you don’t have a cookie scoop, just roll the dough into evenly sized balls and place on your baking tray. Bake for 8 – 10 minutes and transfer to a cooling rack! Leave to cool and enjoy!
Recipe Notes

Feel free to substitute to the Cappuccino mix with Instant Coffee.

Be aware that after you bake your cookies for 8-10 minutes, they will appear under cooked however once set aside to cool they will be thick, fudgy and ready to eat!

These cookies can be stored for 2 to 3 weeks if properly stored in an air tight baking tin that is located in a cool and dry place.
