  1. Preheat oven at 190°C.
  2. In a large bowl, whisk together butter, brown and white sugar until fluffy. Add the eggs in one at a time as you continue whisking. Add the vanilla.
  3. Sift through flour, baking soda and salt. Whisk until well combined. Add desiccated coconut and chocolate chips. Whisk on the lowest setting until well combined.
  4. Use a cookie scoop (to make even portions) and place cookies on a prepared baking tray. If you don’t have a cookie scoop, just roll the dough into evenly sized balls and place on your baking tray. Bake for 10 – 12 minutes and transfer to a cooling rack! Leave to cool and enjoy!
