Coconut Chocolate Chip Cookies

Cake, cookies, chocolate and anything sweet? Yes. Bring it my way! I love sweet treats so much. Especially after dinner! Out of the lot, I truly adore homemade cookies. That’s why today I am bringing you this coconut chocolate chip cookies recipe.

I cannot describe to you how scrumptious this cookie is! Truth be told, I actually made this for my mum because she likes coconut. However, she never got a single cookie because they had all been eaten within an hour or two of leaving the oven. I’ll try to save her some when I make the another batch of these.

As you can see, this cookie is quite gooey, however that’s only because I baked it for 10 minutes as I like my cookies a bit softer than usual. If you like your cookies a bit harder, or with a bit of crunch, bake for 2-12 minutes longer than the recommended recipe time. The longer you bake it the more it puffs up.

  1. Preheat oven at 190°C.
  2. In a large bowl, whisk together butter, brown and white sugar until fluffy. Add the eggs in one at a time as you continue whisking. Add the vanilla.
  3. Sift through flour, baking soda and salt. Whisk until well combined. Add desiccated coconut and chocolate chips. Whisk on the lowest setting until well combined.
  4. Use a cookie scoop (to make even portions) and place cookies on a prepared baking tray. If you don't have a cookie scoop, just roll the dough into evenly sized balls and place on your baking tray. Bake for 10 - 12 minutes and transfer to a cooling rack! Leave to cool and enjoy!
