Caramelised Banana Loaf
A delicious caramelised banana loaf, perfect with a cup of tea or coffee at breakfast or in a bowl of custard at dessert!

  1. 1. Pre-heat oven at 180°C. Add sugar, honey and oil to a large bowl and whisk lightly to combine.
  2. Gradually add the eggs, flour, cinnamon, salt, bananas and vanilla extract as you whisk.
  3. Once well combined (without lumps), bake at 180°C for 30 – 40 minutes. Check that the loaf is done baking by placing a skewer in the loaf – if it comes out clean, the load is ready. If not, continue to bake until the skewer comes out clean.
  4. Once done, leave to cool then serve.
