So, I recently took a short break from blogging because I have had a small lifestyle change. I am in the process of transiting to a more healthy way of life and therefore a healthier way of eating. I have decided to ditch all carbs and adopt a ketogenic diet. I write diet, but really I want to adopt it as a way of life. As such, a majority of my recipes will now be more healthy and veggie filled!
Today, I decided to try out a quick beef stir fry with egg fried cauliflower rice. I must say, it was my first time trying cauliflower rice and I was pleasantly surprised because its much, much lighter than rice grains. Rice grains are quite filling and a bit on the stodgy side however cauliflower rice is rather fluffy and retains flavour a lot more than rice grains.
Trying this recipe out has taught me a few things, mainly, that vegetables don’t have to be boring! This meal was really tasty and it took a short time to make. I love meals that don’t take ages to cook as its much better to spend time with family over a meal than time over a stove.
This meal is also versatile in that you can play around with the vegetables you add to the meat and the various flavours! Give this recipe a try and let me know how it goes!
